Nova Scotia Lobster Rolls

Canada

A prized catch off the Atlantic coast, Nova Scotia lobster has made the province's lobster rolls a summer institution across Canada.

Fresh Atlantic lobster meat tossed lightly in mayonnaise and lemon, piled into a buttered, griddled roll — a coastal Canadian summer favourite.
