Ployes are a signature dish of Acadian communities in New Brunswick, passed down through generations as a thrifty, filling breakfast.
A traditional buckwheat pancake from Canada's Acadian regions — cooked on one side only, giving a distinctive bubbled texture, traditionally served with molasses or maple syrup.
Whisk buckwheat flour, plain flour and salt with boiling water until smooth.
Stir in cold water to loosen to a thin, pourable batter.
Pour onto a hot, lightly greased griddle and cook only on one side — do not flip — until bubbles cover the surface and set.
Serve warm with molasses or maple syrup.
Unlike most pancakes, ployes are never flipped — the bubbled top is the whole point.
