Chifrijo

Costa Rica

Chifrijo was invented in a San José bar in the 1990s and has since become one of Costa Rica's most beloved bar foods.

A hearty Costa Rican bar snack layering rice, beans, crispy fried pork and fresh pico de gallo, traditionally served in a bowl with tortilla chips for scooping.

Ingredients

400gpork belly, cubed
300gwhite rice, cooked
300gblack beans, cooked
2tomatoes, diced
halfonion, finely diced
1lime, juiced

Method

1

Fry pork belly cubes until deeply golden and crisp on all sides.

2

Mix tomato, onion and lime juice to make a fresh pico de gallo.

3

Layer rice, then beans, in a bowl.

4

Top with the crispy pork and pico de gallo, and serve with tortilla chips.

Chef's Tip

Fry the pork slowly to render the fat before crisping at high heat — this gives the best crunch.
