Soup Joumou

Haiti

Haitian enslaved people were forbidden to eat squash soup, which was reserved for French colonists. After independence in 1804, every Haitian ate it. Now a UNESCO-recognised tradition.

Haiti's independence soup — a rich butternut squash, beef and root vegetable soup, eaten on January 1 to celebrate Haiti's 1804 independence from France.
