Jamaican patties evolved from the Cornish pasties brought by British settlers, transformed with West African and Indian spices. They are sold at every lunch counter across Jamaica and in every Jamaican community worldwide.
Jamaica's iconic golden pastry — a flaky, turmeric-yellow crust filled with spiced minced beef, onions and scotch bonnet. The most popular street food and takeaway food in Jamaica.
Make pastry: mix flour, turmeric and salt. Rub in butter until breadcrumb-like. Add water to form dough. Chill 30 minutes.
Brown beef mince with onion, spring onion and scotch bonnet. Add spices and stock. Cook until dry. Cool.
Roll pastry thin. Cut 15cm circles.
Fill half of each circle with mince. Fold over. Press edges with a fork.
Brush with egg wash.
Bake at 200°C for 20-25 minutes until golden.
The turmeric in the pastry is what gives Jamaican patties their characteristic golden colour — do not reduce it.
