The beloved starter of every Argentine asado. The moment it arrives sizzling is the moment the feast truly begins.
Grilled provolone cheese — a thick disc of provolone dusted with oregano, chilli and olive oil, grilled on the asado until melted and golden. Eaten before the main meat.
Place provolone on the grill over coals.
Cook without moving for 4 minutes until the bottom is charred and golden.
Carefully flip. Cook 4 more minutes until fully melted.
Serve immediately with oregano, chilli and bread for scraping.
Don't move the provolone once placed — it needs to form a crust before it will release from the grill.
