Found at every Brazilian padaria and boteco. The name means little thigh — the shape mimics a chicken drumstick.
Brazilian chicken croquettes — a teardrop-shaped dough filled with shredded chicken catupiry cream cheese, breaded and deep-fried. Brazil's most eaten street food snack.
Make dough: bring stock and butter to boil. Add flour all at once. Beat until a smooth, thick dough forms. Cool.
Mix chicken with cream cheese and onion.
Shape dough around filling into teardrops. Coat in egg then breadcrumbs.
Deep-fry at 170°C for 5-6 minutes until golden.
Shape while the dough is still warm and pliable — cold dough cracks when shaping.
