Ecuador's most ordered restaurant dish. Served everywhere from family restaurants to roadside stalls.
Ecuadorian beer-braised chicken — chicken slow-cooked in beer, tomato and naranjilla juice with cumin and coriander. Ecuador's most beloved stew.
Brown chicken in achiote oil. Remove. Fry onion and garlic.
Return chicken. Add beer, tomatoes, cumin and naranjilla juice.
Braise covered 30 minutes. Add coriander at the end.
Serve with rice and fried plantain.
The beer braises the chicken gently — use a mild lager, not a bitter or stout.
