Paraguayan wood-fire grill — beef, pork and chicken grilled over a wood fire for hours. Paraguay's most important social ritual, lasting all Sunday afternoon.
Light the wood fire. Allow to burn down to embers.
Season meats with coarse salt only. Grill beef ribs low and slow for 2 hours. Add pork and chicken later.
Serve directly from the grill with chimichurri.
