Born from the fusion of Peruvian ingredients with Chinese wok cooking. One of the world's great fusion dishes.
Peruvian stir-fried beef — strips of sirloin wok-fried with tomato, red onion, ají amarillo and soy sauce, served with chips and rice. The definitive dish of chifa — Peruvian-Chinese fusion.
Heat wok until smoking. Stir-fry beef in batches until charred. Remove.
Add onion and chilli. Toss on high heat 2 minutes. Add tomato.
Return beef. Add soy and vinegar. Toss. Add coriander.
Serve over chips and rice.
The chips go under the meat — they absorb the soy-vinegar sauce and are the best part.
