Venezuelan black beans — slow-cooked black beans seasoned with papelón raw sugar, garlic, onion and cumin. The essential side dish of the pabellón criollo national plate.
Simmer beans until very tender, about 45 minutes.
Fry onion and garlic in oil. Add cumin. Add to beans.
Season with papelón and salt.
Simmer 15 more minutes until thick.
