Egypt's most culturally significant dish. Banned by Caliph Al-Hakim in the 11th century and restored by popular demand.
Egyptian Jew's mallow soup — finely chopped green leaves of molokhia cooked in chicken broth with garlic and coriander until silky and slightly glutinous. Eaten with rice.
Heat chicken stock to simmering. Add chopped molokhia. Cook 5 minutes.
Fry garlic and coriander in butter until very fragrant.
Pour sizzling garlic mixture into soup. The soup will froth.
Serve immediately over rice with chicken.
Add the fried garlic at the very last moment — it is poured in sizzling hot and loses its fragrance quickly.
