Named after Om Ali — Mother of Ali — from the medieval Mamluk era. Egypt's version of bread pudding.
Egyptian bread pudding — torn pastry or croissants soaked in sweetened milk with coconut, raisins and nuts, baked until golden. Egypt's most beloved dessert.
Tear pastry into a baking dish. Scatter coconut, raisins and nuts over.
Heat milk, cream, sugar and vanilla until sugar dissolves. Pour over pastry.
Bake at 200°C for 20 minutes until golden and bubbling.
The pastry must be submerged in the liquid — press it down before baking.
