Shito is Ghana's essential condiment. It is served with kenkey, waakye, fried yam and almost anything else. It is sometimes called 'black pepper sauce'.
A deep, smoky Ghanaian hot pepper sauce with dried fish, shrimp and chilli. A little spoonful goes on rice, kenkey, fried plantain and more.
Heat the oil in a deep pan and fry the onion until deep golden, about 12 minutes.
Add the ginger and garlic and cook for 2 minutes.
Stir in the tomato purée, ground shrimp, chilli, stock cubes, salt and pepper.
Cook on a low heat, stirring often, for 20-25 minutes until the oil separates and the sauce is dark and thick.
Cool and store in clean jars, topped with a layer of oil. It keeps for months.
Cook it slowly and stir often. The dark, almost caramelised colour is what gives shito its depth.
