Dabo kolo are a staple snack served alongside coffee during Ethiopia's traditional coffee ceremony.
Crunchy Ethiopian snack pellets of spiced fried dough — a popular teatime nibble, seasoned simply with berbere and a touch of sugar.
Mix flour, berbere, sugar, oil and water into a firm dough.
Roll into thin ropes and cut into small pellet-sized pieces.
Deep fry in batches at medium heat until deeply golden and crunchy throughout, about 6-8 minutes.
Cool completely before serving — they crisp further as they cool.
Fry at a moderate rather than high heat so the pellets cook through to a full crunch without burning outside.
