Served at virtually every Ethiopian meal. During fasting periods it becomes the main dish.
Ethiopian collard greens — slow-cooked with onion, garlic and niter kibbeh until silky and deeply flavoured. The essential vegetable side at every Ethiopian meal.
Fry onion, garlic and ginger in niter kibbeh until soft.
Add greens. Stir. Cook covered over low heat for 20-25 minutes until very tender.
Season with salt and chilli.
The greens need slow, patient cooking — quick-cooked greens retain bitterness.
