Misir Wat

Ethiopia

Misir wat is a staple of Ethiopian fasting days when meat is forbidden. Ethiopia has one of the world's richest vegetarian cuisines developed through centuries of Orthodox Christian fasting.

Ethiopia's essential red lentil stew — split red lentils cooked down with onions and berbere into a thick, deeply spiced purée. The backbone of a traditional Ethiopian spread.

The long dry-frying of onions is the Ethiopian foundation — it creates a deeply caramelised base that no shortcut can replicate.
