The dish ordered most by Ethiopians eating out. The sizzling clay pot is part of the experience.
Ethiopian sautéed meat — beef or lamb quickly stir-fried with onion, tomato, jalapeño and rosemary in a hot clay pan. Ethiopia's most popular restaurant dish.
Heat a clay pot or heavy pan until smoking. Add butter and garlic.
Add meat. Sear on high heat until browned but still pink inside.
Add onion, jalapeño, tomato and rosemary. Toss. Season with berbere.
Serve in the clay pan still sizzling — tibs is theatre as much as food.
