The dish of the Ivorian maquis open-air restaurant. Found on every street corner in Abidjan.
Ivorian braised chicken — chicken marinated in garlic, ginger and spices then grilled over charcoal and finished with a rich onion-tomato sauce. The star of every Ivorian maquis.
Marinate chicken in garlic, ginger, paprika, bouillon and lemon 2 hours.
Grill over charcoal until charred. Remove.
Fry onion until golden. Add tomatoes. Cook down. Add chicken.
Braise covered 20 minutes.
The charcoal char is essential — the smoky flavour is what distinguishes this from plain braised chicken.
