Morocco's most important soup. Eaten at Ramadan iftar with dates and chebakia honey pastries. Sold from enormous pots in the Djemaa el-Fna square in Marrakesh.
Moroccan tomato and lentil soup — the soup that breaks the Ramadan fast each evening. A thick, nourishing broth of chickpeas, lentils, tomato, celery and herbs with a lemon egg finish.
Fry onion and celery. Add tomatoes, purée and spices. Add lentils and water. Simmer 30 minutes.
Add chickpeas and herbs. Season.
Stir in beaten egg and lemon for the final minute.
The beaten egg stirred in at the end thickens and enriches the soup in the last moment.
