Nigeria's pub soup. Ordered at every bar and beer parlour. Believed to cure colds, hangovers and weariness.
Nigerian peppery broth — a thin, fiery soup of goat, chicken or fish, intensely spiced with a blend of pepper soup spices including calabash nutmeg and alligator pepper. The soup of Nigerian bars.
Simmer meat in water with spices, garlic and chilli for 25-30 minutes until tender.
Season with crayfish and salt.
Garnish with scent leaves.
The broth should be thin and very spiced — this is a drinking-eating dish, not a thick stew.
