Invented on Zanzibar in the 1990s. Now the island's most famous street food, with dedicated late-night stalls in Stone Town.
Zanzibar street food — a thin flatbread folded around a filling of egg, minced meat, cheese and vegetables, fried on a griddle until crispy. Nothing like Italian pizza.
Make a thin dough. Roll each portion paper-thin.
Place filling (mince, tomato, onion) on one half. Crack an egg over. Fold over and seal edges.
Fry on an oiled griddle, pressing flat, 4 minutes each side.
Cut open. Drizzle with mayo and chilli sauce.
Roll the dough as thin as possible — this is a crispy street snack, not a bready wrap.
