Chorba

Tunisia

The soup that breaks the Ramadan fast throughout the Maghreb. The smell of chorba at sunset is the smell of Ramadan.

Tunisian lamb and vegetable soup — a mildly spiced broth of lamb, chickpeas, tomatoes and orzo, the great soup of Ramadan eaten to break the fast.
