The ancient bread of the Caucasus. The saj griddle is found in every Azerbaijani village home.
Azerbaijani saj flatbread — bread cooked directly on a convex iron saj griddle over an open fire, producing a thin, chewy, slightly smoky round. The daily bread of rural Azerbaijan.
Mix flour, water, salt and yeast to a soft dough. Rest 45 minutes.
Stretch a ball of dough very thin by hand.
Cook on a very hot dry saj or convex griddle 1-2 minutes per side.
Serve immediately.
The saj must be extremely hot — a cool surface produces a steamed rather than cooked bread.
