Pol roti is the everyday breakfast bread of Sri Lanka, sold from dawn throughout the island.
Thick flatbreads made from wheat flour and freshly grated coconut — cooked on a dry pan until charred in spots. Sri Lanka's everyday bread.
Mix flour, coconut, chilli, onion and salt. Add enough water to make a firm dough.
Divide into balls. Flatten by hand into thick rounds.
Cook on a lightly oiled pan over medium heat, 4 minutes each side.
Serve hot with coconut sambol.
Press the dough thin with your hands rather than a rolling pin — hand-shaping creates a more rustic texture that crisps better.
