The most spectacular dish in Azerbaijani cuisine. Served at the table still in its golden bread dome.
King pilaf — rice baked inside a crust of bread, encasing lamb, dried fruits and chestnuts. Brought to the table as a golden dome and broken open.
Braise lamb with dried fruits and chestnuts until tender.
Line a deep oven dish with buttered bread. Fill with alternating layers of rice and lamb mixture.
Drizzle saffron butter over. Seal with bread. Bake at 180°C for 60 minutes.
Invert onto a serving plate. Break open at the table.
The bread crust must seal completely — gaps allow steam to escape and the rice won't cook properly.
