Begun Bhaja

Bangladesh

Eaten at every meal in Bangladesh as a side dish. The simplicity of the preparation is deceptive — the quality of the aubergine and mustard oil are everything.

Pan-fried spiced aubergine slices — rubbed with turmeric, chilli and salt and fried until golden and caramelised. The simplest, most essential side dish in Bangladeshi cooking.
