Bumbu kacang, peanut sauce, is Indonesian. It's the signature of satay, which came to Java from Arab traders' kebabs and became the national dish.
A rich, glossy peanut sauce with chilli, garlic, lime and kecap manis. The classic dip for chicken satay.
Heat the oil and gently fry the shallots for 4 minutes. Add the garlic and chilli for 1 minute.
Stir in the peanut butter, coconut milk, kecap manis, tamarind and sugar.
Simmer on low for 8-10 minutes, stirring, until thick and glossy. Add water to thin.
Season with salt, and add more lime or sugar to balance. Serve warm with satay.
The sauce thickens as it cools; loosen with warm water. Use freshly roasted and ground peanuts for the most authentic flavour.
