The essential condiment of the Bangladeshi meal. The first plate on the table is always bhorta.
Mashed and spiced vegetables — smoked aubergine, potato or dried fish mashed with mustard oil, green chilli and raw onion. The defining condiment of the Bangladeshi table.
Roast aubergines directly over a gas flame until completely charred outside and soft inside.
Peel. Mash roughly. Mix with onion, chilli, mustard oil, lime and salt.
Adjust heat and seasoning. Serve with rice.
The char of open-flame roasting is irreplaceable — oven-roasted aubergine produces a pale imitation.
