From Chengdu. Legend says it was created by a pockmarked old woman — mapo means pockmarked grandmother.
Sichuan silken tofu in spiced minced pork sauce — numbing Sichuan pepper and fiery doubanjiang create one of China's most complex and addictive dishes.
Fry mince until browned. Add doubanjiang. Cook 2 minutes until fragrant.
Add garlic and ginger. Add stock. Bring to simmer.
Gently add tofu. Simmer 5 minutes. Thicken with cornflour mixed with water.
Top with ground Sichuan pepper and spring onion.
Handle the silken tofu gently — it breaks apart easily. Add it without stirring and shake the pan instead.
