Chicken Tikka

India

Chicken tikka is a cornerstone of Indian restaurant menus worldwide, its smoky char traditionally achieved in a blisteringly hot tandoor oven.

Tender chunks of chicken marinated in yoghurt and spices, then grilled until lightly charred — a beloved Indian appetiser bursting with smoky, tangy flavour.

Ingredients

600gchicken breast, cubed
200gyoghurt
1 tbspginger garlic paste
2 tspgaram masala
1 tsppaprika
1lemon, juiced

Method

1

Mix yoghurt, ginger garlic paste, garam masala, paprika and lemon juice into a marinade.

2

Coat the chicken thoroughly and marinate for at least 2 hours, ideally overnight.

3

Thread onto skewers and grill over high heat, turning regularly, for 12-15 minutes until charred and cooked through.

4

Serve hot with mint chutney and lemon wedges.

Chef's Tip

A longer marinating time allows the yoghurt to properly tenderise the chicken, not just flavour the surface.
