Filipino cured pork — thin slices of pork belly cured in sugar, garlic and soy, then pan-fried until caramelised. The classic Filipino breakfast with garlic fried rice and eggs.
Mix sugar, salt, garlic and soy. Coat pork slices thoroughly. Refrigerate 24-48 hours.
Fry in a pan with a little water until water evaporates, then fry in the rendered fat.
Cook until sticky and caramelised. Serve with sinangag and a fried egg.
Add a splash of water to the pan at first — it steams the tocino through before caramelisation begins.
