Katsu curry combines two dishes introduced to Japan from abroad — breaded cutlets and curry — reworked into something now considered distinctly Japanese comfort food.
A crisp breaded pork or chicken cutlet served alongside a mild, glossy Japanese curry sauce over rice — a hugely popular comfort food in Japan.
Simmer onion and carrot in water until soft, then stir in curry roux until the sauce thickens.
Coat chicken in flour, egg, then panko breadcrumbs.
Fry the coated chicken until golden and cooked through, then slice.
Serve the sliced chicken over rice, generously topped with the curry sauce.
Panko breadcrumbs give a much crispier coating than regular breadcrumbs, thanks to their larger, airier flakes.
