Japan's most popular pork dish. The tonkatsu restaurant is a beloved institution.
Japanese pork cutlet — thick pork loin coated in panko breadcrumbs and deep-fried until the crust is shatteringly crispy, served with tonkatsu sauce and shredded cabbage.
Score fat of chops. Season. Coat in flour, then egg, then panko.
Deep-fry at 170°C for 6-7 minutes until golden. Rest 3 minutes.
Slice into strips without separating. Serve with sauce and cabbage.
The oil must not be too hot — tonkatsu fries at a lower temperature than Western fried food for more even cooking.
