The first and last offering at a beshbarmak feast. Guests receive it before and after the meal as a sign of respect.
Lamb bone broth — a clear, golden stock served at the start and end of a beshbarmak feast. The most important liquid of Kazakh cooking.
Cover bones with cold water. Bring to boil. Skim thoroughly.
Add onion, carrot, bay and peppercorns. Simmer 2 hours.
Strain. Season. Serve in bowls with spring onion and dill.
Skim obsessively for the first 30 minutes — a clear sorpa is a mark of a good cook.
