Brought to Malaysia by Indian Muslim traders. Now the breakfast of all Malaysians regardless of ethnicity.
Malaysian flaky flatbread — a laminated dough spun and folded to create hundreds of layers, cooked on a hot griddle until crispy outside and soft within. Eaten with dal or curry.
Make a soft dough. Rest 1 hour. Divide into balls. Rest 30 more minutes.
Flatten each ball on an oiled surface. Spread with ghee. Fold repeatedly to create layers.
Flatten again. Cook on a hot griddle 3 minutes each side.
Scrunch between palms immediately to separate the layers.
Scrunching between palms after cooking is the key step that creates the fluffy, layered interior.
