Sinigang

Philippines

Arguably more loved than adobo in Filipino homes. The tamarind-soured broth predates Spanish colonisation.

Tamarind sour soup — broth sharpened with tamarind filled with pork, tomatoes and vegetables. The taste of Filipino comfort — sour, savoury and restorative.
