Every city district in Taipei claims the best. The annual Taipei Beef Noodle Festival draws competitive chefs.
Taiwan's most iconic dish — braised beef shank in a rich soy and spice broth over thick wheat noodles. Introduced by mainland Chinese soldiers in the 1940s and made Taiwan's own.
Brown beef shank. Add doubanjiang. Cook 2 minutes.
Add soy, rice wine, garlic, ginger, star anise and water to cover. Simmer 2 hours until tender.
Slice beef. Serve in broth over noodles with bok choy and spring onion.
The doubanjiang is non-negotiable — it provides the characteristically deep, spicy redness.
