Named for the three equal cups of flavouring. Every Taiwanese home cook's signature dish.
Chicken braised in one cup each of sesame oil, soy sauce and rice wine with basil and garlic — fragrant, sticky and deeply savoury. The iconic dish of Taiwan's rice wine cooking tradition.
Heat sesame oil. Fry garlic and ginger until golden. Add chicken. Brown well.
Add soy and rice wine. Simmer 15 minutes until sauce is thick and glazed.
Add Thai basil. Toss and serve immediately over rice.
Add the basil right at the end — it should wilt from the heat only.
