Nam chim gai, Thai sweet chilli sauce, is traditionally served with grilled chicken. It has become a worldwide favourite with spring rolls and crackers.
A sticky, sweet, mildly hot Thai dipping sauce with garlic and vinegar. For spring rolls, fish cakes and grilled chicken.
Put the chillies, garlic, vinegar, sugar, water and salt in a saucepan.
Bring to the boil, stirring until the sugar dissolves, then simmer for 8-10 minutes.
Stir in the cornflour mixture and simmer for 1-2 minutes until thick and glossy.
Cool and store in a jar. It keeps for 3 weeks in the fridge.
For more heat, leave the seeds in. Cornflour gives the classic clear, sticky texture.
