The Emperor's scramble — a fluffy shredded pancake caramelised in butter and sugar, served with plum compote. Austria's most beloved dessert.
Whisk egg yolks with sugar and milk. Add flour. Beat until smooth. Fold in stiff egg whites.
Melt butter in a wide oven pan. Pour in batter. Scatter raisins.
Cook on hob until set on bottom. Transfer to oven at 200°C for 8 minutes.
Tear into rough pieces with two forks. Dust heavily with icing sugar.
Tear rather than cut the pancake — irregular pieces caramelise better than neat slices.
