A cornerstone of Liège cooking, eaten year-round as a starter or light lunch.
Warm Liège-style salad of green beans and potatoes dressed with a hot bacon-and-vinegar dressing — hearty Belgian simplicity at its best.
Boil green beans until tender. Drain.
Fry lardons until crispy. Remove, keeping the fat.
Add shallot to the fat. Cook 1 minute. Add vinegar and mustard. Whisk.
Toss warm beans and potatoes in the dressing.
Top with lardons and parsley. Serve warm.
The salad must be served warm — the dressing is meant to be hot when it coats the beans.
