Stoemp

Belgium

Stoemp is Brussels comfort food at its simplest, its name derived from the Flemish word for 'to mash', and a fixture of home kitchens across Belgium.

A comforting Belgian mash of potatoes blended with vegetables like carrots or leeks, traditionally served alongside sausage — homely, simple food found on tables across Brussels.

Ingredients

800gpotatoes, peeled and chopped
300gcarrots, chopped
50gbutter
100mlmilk
1onion, finely chopped
4Belgian sausages, to serve

Method

1

Boil potatoes and carrots together until very tender, about 20 minutes.

2

Soften onion in butter in a separate pan.

3

Drain the potatoes and carrots, then mash together with butter, milk and the softened onion.

4

Season well and serve hot alongside grilled sausages.

Chef's Tip

Don't over-mash — stoemp is meant to have a little rustic texture, not be perfectly smooth.
