Inscribed on Croatia's intangible cultural heritage list in 2007.
Croatian cottage cheese pastries — sheets of thin dough filled with cheese and cream, either boiled or baked. Zagreb's most beloved dish, protected as intangible Croatian cultural heritage.
Make dough with flour, water and oil. Rest 30 minutes. Mix cheese with eggs and half the sour cream.
Roll dough thin. Spread filling over. Roll up tightly. Cut into pieces.
Boil 15 minutes, or bake at 200°C for 30 minutes covered in remaining sour cream.
Serve hot.
The boiled version is lighter; the baked version richer and more golden. Both are authentic.
