The most frequently cooked dish in Georgia. The combination of tarragon with tomato is distinctly Georgian.
Georgian braised chicken with tomatoes and herbs — chicken pieces stewed in fresh tomatoes with onion, coriander, fenugreek and tarragon. Georgia's great everyday dish.
Brown chicken in butter. Remove. Fry onions until golden.
Add tomatoes. Cook down 10 minutes. Return chicken.
Add garlic, fenugreek and paprika. Simmer covered 25 minutes.
Add fresh coriander and tarragon at the end.
Add the fresh herbs only at the end — the tarragon especially turns bitter if cooked long.
