A protected regional food of Savonia. The name means fish rooster — a strange name for a fish pie that refers to the bread dough coating.
Finnish fish pie — a rye bread crust encasing whole vendace and pork belly, baked for hours until the fish bones dissolve. A speciality of Savonia.
Make a stiff rye dough. Rest 30 minutes. Roll thick.
Place fish and pork in the centre. Season. Fold dough around filling. Seal very firmly.
Bake at 225°C for 30 minutes, then at 150°C for 4-5 hours.
Brush with butter. Wrap in cloth to soften the crust.
The long, low bake is what dissolves the fish bones — this dish cannot be rushed.
