Khachapuri

Georgia

Khachapuri is Georgia's national dish and is eaten at every meal and occasion. The Adjarian boat-shaped version with the egg is the most famous internationally, though there are many regional variations.

Georgia's most iconic dish — a boat-shaped bread filled with molten sulguni cheese, topped with an egg and butter. One of the world's great bread-cheese combinations.

Ingredients

400gstrong white flour
7gfast-action yeast
1 tspsalt
1 tspsugar
250mlwarm water or milk
2 tbspvegetable oil
500gsulguni or mozzarella, grated
200gfeta, crumbled
4eggs
50gbutter, cut into pieces

Method

1

Make dough: mix flour, yeast, salt and sugar. Add liquid and oil. Knead 10 minutes. Prove 1 hour.

2

Mix cheeses together. Season.

3

Divide dough into 4. Roll each into an oval. Form into a boat shape by pinching the ends.

4

Fill generously with cheese mixture.

5

Bake at 220°C for 15 minutes until bread is golden.

6

Remove from oven. Make a well in the cheese. Crack an egg in. Add butter pieces. Return to oven 3-4 minutes — yolk should remain runny.

Chef's Tip

The egg yolk must remain runny — this is non-negotiable. Diners stir the yolk and butter into the melted cheese at the table.
