Kharcho is one of Georgia's most ancient dishes, mentioned in texts dating to the 17th century. It is always made from beef — other meats are used in different soups but kharcho must be beef.
Georgia's richly spiced beef and rice soup — dark with tomatoes, walnuts and tkemali plum sauce, fragrant with coriander, fenugreek and garlic. One of the Caucasus's great soups.
Simmer beef in 2L water 1 hour. Skim regularly. Remove meat and shred.
Fry onion until golden. Add tomatoes and cook down 10 minutes.
Add onion-tomato mixture to broth. Add rice. Simmer 15 minutes.
Add shredded beef, ground walnuts, tkemali and all spices.
Simmer 10 more minutes. Add garlic and fresh coriander.
Taste — it should be sour, spiced and deeply savoury.
Tkemali (Georgian sour plum sauce) is the key ingredient. Tamarind paste is the best substitute if unavailable.
