Shkmeruli comes from the village of Shkmeri in the Racha region of Georgia. The dish became famous nationally and is now served at Georgian restaurants worldwide.
Georgia's spectacular garlic chicken — a whole chicken roasted then finished in an extraordinary amount of garlic and cream sauce. Named after the village of Shkmeri.
Season chicken generously. Roast at 200°C for 35-40 minutes until golden and cooked through.
Meanwhile, fry all the minced garlic in butter very gently — it must not brown, just soften.
Add milk or cream to the garlic. Simmer 5 minutes until slightly thickened.
Transfer roasted chicken to the clay pot or baking dish. Pour garlic cream over.
Return to oven 10 minutes.
Serve directly from the clay pot with bread to mop up the sauce.
The quantity of garlic seems alarming — an entire head — but the long gentle cooking mellows it completely into something sweet and aromatic.
