500gziti or penne pasta, cooked
600gbeef mince
400gtinned tomatoes
1onion
1 tspcinnamon
1 tspallspice
100gParmesan or kefalotyri, grated
100gbutter
100gflour
800mlmilk
2eggs, for béchamel

Method

1

Brown mince with onion, cinnamon and allspice. Add tomatoes. Simmer 15 minutes.

2

Make thick béchamel. Whisk in eggs and half the cheese.

3

Layer: pasta, meat sauce, pasta, béchamel. Top with remaining cheese.

4

Bake at 180°C for 45 minutes until golden.

Chef's Tip

The béchamel must be very thick — a thin sauce produces a runny pastitsio.
